  12. Continue cooking for 12 minutes, shaking halfway through.

  14. Brush riblets with some of the barbecue sauce.

  15. Cook for 1–2 minutes, until the sauce caramelizes slightly.

  16. Transfer riblets to a bowl and toss with remaining sauce.

  17. Let rest for 3–5 minutes before serving.

  19. In a small bowl, combine 2 tsp. packed dark brown sugar, ¾ tsp. smoked paprika, ½ tsp. garlic salt, and ⅛ tsp. black pepper.
