INGREDIENTS

  • Tortillas
  • 1 lb. pork loin, cut into thin strips
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 Thai chili thin sliced
  • 2 tsp. Hoisin sauce
  • 2 tsp. sugar
  • 2 tsp. water
  • Oil
  • Salt

 

Slaw ingredients

  • ½ cup crushed pineapple
  • ½ cup cucumber, diced
  • ½ cup green onion
  • 1 lime, juiced
  • ¼ cup onion, diced
  • ¼ cup cilantro, chopped
  • Salt and pepper

Steps 

  1. Combine all of the slaw ingredients together; squeeze with a fresh lime. Mix and set aside.
  2. Slice pork into thin strips.
  3. In a separate bowl, mix together onion, garlic, chili and Hoisin sauce; then, add the pork strips. Stir and coat pork evenly.
  4. Heat cast iron pan over medium-high heat, and add oil to the pan.
  5. Add in pork strips to skillet and cook, for about 10 minutes, letting it sit to add color on each side. Add sugar and water, stirring constantly until sugars caramelize and turn golden brown.
  6. Combine slaw and caramelized pork strips into a tortilla shell, top it off with your favorite kind of shredded or crumbled cheese, then take a bite!
